Guest Recipe Part 1: Zanna’s healthy Protein-Packed Chocolate Cupcakes

Thanks to the wonders of Twitter, my obsession with all things health food and enjoyment of ‘meeting’ fellow bloggers, I came across the babe that is @zanzapan not long ago and absolutely loved her Instagram account packed full of super-healthy, clean eating recipes. A self-confessed ‘foodie’ and ‘gym rat’, her photos are mouth-watering yet all made from ingredients that your body (and weight) will love – she even has her own eBook which you can buy right here.

As part of my guest bloggingspecial feature, along with Sophie @stopsnapshare and Natalie @_NatalieJohanna, I was keen to get Zanna on board and contribute a delicious but nutritious recipe to share with my followers and readers too. So, here’s Part One: Zanna’s special Protein-Packed Chocolate Cupcakes – they may sound too good to be true but yes, you enjoy making and eating these guilt-free!

Zanna’s Protein-Packed Chocolate Cupcakes

This recipe is a personal favourite of mine… they’re protein packed chocolate cupcakes filled with a gooey peanut butter centre, need I say more?

Ingredients:

  • 1/2 cup chocolate protein powder
  • 1/2 cup flour (I used brown rice flour, but this could be substituted for almond or oat flour)
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 170g Greek yoghurt
  • 1 egg
  • 1 egg white
  • 1/4 cup almond milk
  • 1/3 cup powdered sweetener e.g. stevia
  • 1/3 cup peanut butter

Instructions:
Just combine the ingredients (except the peanut butter) in a mixing bowl, and then divide the batter between 8 or 9 cupcake cases. Then pop a teaspoon of peanut butter in each case and push it down so it is submerged in the mixture. All you have to do now is bake the cupcakes at 180c/350f for around 10-15 minutes until they’re cooked through! They’re best eaten fresh from the oven or you can microwave them to re-melt the centre. Yum!
