Recipe 2: Layered Banana & Chocolate Tofu Mousse with Berry Chia Jam & Strawberry Whey Hey

This tastes far too naughty for it to be in any way healthy but fear not, this indulgent dessert is full of clean eating ingredients. The chocolate ‘mousse’ adds a rich layer in between the very tasty and fruity Berry Chia Jam, while the topping of Strawberry Whey Hey ice cream finishes this off perfectly – one to serve for others maybe!

For the Banana & Chocolate Tofu Mousse:

  • 1 x 300g pack of silken tofu
  • 1 banana
  • Splash of apple juice
  • ½ tub of Quark (fat-free soft cheese)
  • 2 tbsp cocoa powder
  • 1-2 tbsp stevia
  • Few drops of vanilla essence

Simply place all ingredients together in a blender and whizz up until totally smooth. Add more juice if too thick; you want it a creamy ‘mousse’ like texture. This will make about 3-4 servings. Leave to chill until needed.

For the Berry Chia Jam:

  • 150g frozen mixed berries
  • 1 tbsp stevia (or to taste)
  • 2 tbsp chia seeds

Simply put the berries in a small pan with a dash of water, heat up, simmer until the juices run out then stir in the chia seeds. Simmer for a further few minutes (you may want to add more water as the seeds will quickly absorb liquid) then pour into a tub, leave to cool then keep in the fridge until needed.

Get tucking in! Using wine glasses or sundae dishes, spoon some of the berry chia jam at the bottom (about ⅔ of the glass). Fill another third with the chocolate tofu mousse, then spoon in a tub of Strawberry Whey Hey ice cream which should just about fill to the top. Sprinkle with flaked almonds then you’re ready to go!
