Berry, Coconut & Vanilla Frank Bar Trifle

Ok so this isn’t your standard trifle, but with a layer of fruit (berry chia seed ‘jam’), creamy yogurt (fat-free with vanilla and coconut) and some form of biscuit or cake (Frank Bar, of course!), this is a quick, simple but fabulous dessert which can be served individually or made into one large one. Either way, get making and tasting!

Ingredients:
Berry chia seed jam –

  • 100g frozen berries
  • 1-2 tbsp natural sweetener, to sweeten
  • 2 tbsp chia seeds

Put the berries in a small pan with a dash of water and Sweet Freedom, heat up and simmer until the juices run out, then stir in the chia seeds. Simmer for a few more minutes (you may want to add more water as the seeds quickly absorb liquid) then pour into a tub, leave to cool then keep in the fridge until needed.

Coconut & Vanilla Yogurt –

  • 150g fat-free Greek yogurt
  • 1 scoop vanilla whey protein (I used Optimum Nutrition)
  • 1 tbsp desiccated coconut
  • ½ tsp vanilla extract

All you need to do is mix all of the ingredients together in a bowl and chill until needed.

Topping – Choose you favourite flavour Frank Bar (I used the Blueberry & Chocolate one, to keep with the berry theme!) and break it up into pieces.

Serve it up! Layer up generous spoonfuls of berry chia seed jam, dollops of yogurt on top then sprinkle with Frank Bar pieces – simple but heavenly!
