Layered Spiced Apple & Vanilla Provamel Crumble Pot

A simple but gluten-free, dairy-free and full of goodness for when you crave comfort food as the nights get darker and weather turns colder – without the calories, fat and sugar! This healthy and easy version of an apple crumble can be made in individual pots or in one big dish, it’s totally up to you – I’ve got an obsession with kilner jars at the minute so I served mine in that to show the layers of the dessert. Using the Provamel soya yogurt sweetened with agave syrup, this pudding is just what you need to warm you up this winter!

Ingredients:
Spicy apples

  • 4 apples, peeled and thickly sliced
  • Cinnamon and allspice
  • A few sprinkles of sweetener

Put the apples in a pan with spices and sweetener to taste with a dash of water and cook for about 10-15 minutes until soft.

Vanilla ‘custard’

  • 250g Provamel soya yogurt sweetened with agave syrup
  • 1 scoop vanilla whey protein powder
  • 1 tsp vanilla extract

Very simple: simply mix together ingredients and keep in fridge to thicken slightly until needed!

Crumble topping
As part of my Provamel challenge, I was sent a tub of my own customisedAs part of my Provamel challenge, I was sent a tub of my own customised muesli from My Muesli and chose a selection of soy, rice, buckwheat and quinoa flakes, sunflower and pumpkin seeds, morello cherries and pistachios (fantastic combination!). I mixed a few generous spoonfuls with some melted coconut oil, extra ground cinnamon and allspice plus a little agave syrup and coconut flour to combine. Spread out on a baking tray and bake in oven for about 5 minutes until going golden and crisp.

Get assembling!
Put the apple slices at the bottom of chosen dish (use while still hot or warm up!), spoon over vanilla ‘custard’ then sprinkle crumble over when fresh out of the oven – now stick your spoon in and enjoy!
