Cooking Up Wyldsson’s Buckwheat Pancakes

I don’t make pancakes that often but when I do, I like them to be worthwhile. In the run-up to Pancake Day I must have gone through about 10 different batches (following all different recipes) which turned out to be a total disaster… Although the day before I bought a new non-stick pan and the next recipe I tried turned out perfectly – and they have been a success ever since!

I was recently send a Fluffy Buckwheat Pancake Mix from Wyldsson, a company offering ‘award-winning clean and healthy foods that taste great. No junk, no gluten.’ As someone who usually avoids any pre-packaged or pre-made mixes, the ingredients on this reassured me that it only included natural things I usually have in my cupboards:

  • Wholegrain buckwheat flour
  • Coconut flour
  • Organic milled flax seeds
  • Chia seeds
  • Sodium bicarbonate

All that is required is a banana, egg and 140ml milk of choice (I went for oat milk, my current favourite) plus coconut oil for frying. Simply mash and mix, the batter was so easy to cook and only took a few minutes on each side per pancake – no sticking or burning in sight (thank you, pan!).


Served up with pomegranate seeds, strawberries and a generous dollop of Wyldsson’s incredible Hazelnut & Cocoa Spread – a healthy version of Nutella without palm oil, refined sugars or artificial flavours – I was really happy with the result. The pancakes were definitely ‘fluffy’, light, airy but with some substance and weren’t overly sweet or too plain. Next time I cook these up I’d probably add some cacao or cocoa powder to make chocolate ones – yum!


This mix gets the thumbs up if you’re short of time or looking for a tasty, easy and nutritious pancake mix free from gluten, dairy or refined sugars.
