Tried and tested: Proteinologist’s Protein Cherry Bakewells

I’ve become obsessed with all things protein over the past few months and have noticed a real difference in my body by reducing my carbohydrate intake and doing more daily weight, resistance and core training. Forget smashing the cardio and carb loading as I used to, I feel I’ve found a happy medium these days and feel more toned and stronger than ever.

I follow quite a few inspiring health food/fitness blogger girlies on social media, including Samantha, Zanna, Sophie, Natalie and Nic. Also known as @Proteinologist, I’m also huge fan of Nicky’s wonderful protein-packed creations on her Instagram, Facebook and Twitter channels; I check them every few days so I don’t miss out on her fabulous clean eating treats which are completely guilt-free but look absolutely delicious. What’s even more exciting is that earlier today, her website was launched along with her Proteinology – The Cookbook: “The art of protein baking from cookies to cakes to brownies”, featuring 32 healthy, protein-based recipes…I’ll be placing an order VERY soon!

When I spotted her Protein Cherry Bakewell recipe I HAD to try them, being a huge fan of anything almondy and biscuity with a delicious filling. Her healthy protein version looked amazing so, tonight I gave them a go…here’s the result!

TARTS

Note: For these I used The Groovy Food Company coconut oil, Optimum Nutrition vanilla lean whey protein powder, Urban Fruit unsweetened dried cherries.
