Here we have some gorgeous chocolate puddings, smothered in an indulgent and rich chocolate ‘sauce’, finished off with soft figs, crunchy walnuts and oaty granola. They would be great to make if you’re having friends or family over as they could be baked in advance, then decorated at the last moment. A perfect autumnal pudding made using Nature’s Charm’s evaporated oat milk which adds a wonderful creaminess to the texture and flavour of these desserts. [Note: this is a paid recipe working in collaboration with Nature’s Charm.]

Ingredients:

For the puddings –

  • 120g gluten-free flour
  • 40g cocoa powder
  • 90g sweetener
  • 1 teaspoon baking powder
  • 250ml Nature’s Charm evaporated oat milk
  • 2 tablespoons nut butter
  • 1 tablespoon oil
  • 1 teaspoon vanilla extract

For the sauce –

  • 3 tablespoons icing sugar
  • 1 tablespoon cocoa powder
  • 1-2 tablespoons Nature’s Charm evaporated oat milk

To decorate –

  • 2 large fresh figs, halved
  • Granola/walnut oat mixture, to sprinkle over

Make them!

  1. First make the puddings: Mix everything together well then grease 4 x individual pudding dishes.
  2. Spoon the mixture between them, filling each to the top and smoothing off the top. Bake at 180C for 20-25 minutes, until risen and firm. Leave to cool, then pop out of the tins, flat side up (you may have to cut off any excess mixture).
  3. Mix together the icing sugar, cocoa powder and enough evaporated milk to make a slightly thick, smooth sauce. Spoon this on top of each cooled pudding, then add a fig half on top. Sprinkle over a little granola/oat mixture, then serve!
