Tom’s Oatcakes

Time has flown by and my little boy is now 9 MONTHS OLD. He’s such a happy chappy who never sits still (no wonder he builds up such an appetite!) and has four teeth coming through nicely. Tom is loving his food and enjoying a combination of spoon-feeding and feeding himself finger foods. He loves Aldi’s own tomato wheels and apple/blueberry flavoured rice cakes as well as the odd reduced-sugar rusks (why are they still so high in sugar?!) as well as bread/toast, but I try to give him a balance of both shop-bought and homemade snacks.

I whizzed up these oatcakes (soft biscuits) which went down really well – both to eat and also suck on to help his gums as his teeth have been pushing through his gums – poor baba! Easy to make and great for taking out and about in a little tub, I hope your baby likes these too if you give them a go!

Ingredients:

  • 120g rolled oats (I used Flahavan’s)
  • 50g baby rice
  • 2 teaspoons cinnamon
  • 1 mashed banana or 30g apple puree
  • 2 tablespoons coconut oil, melted (I used LucyBee)
  • 2-3 tablespoons water or unsweetened almond milk (I used Alpro)

Get making!

  1. Preheat the oven to 170 degrees and grease and line a baking sheet with parchment paper.
  2. Place all of the ingredients in a blender (I use my Ninja Kitchen Auto IQ) and pulse until the mixture forms a dough.
  3. Flour the surface and roll out the dough then cut small biscuit shapes – or animal ones, whatever you’ve got!
  4. Place on the sheet and bake for 10-12 minutes until lightly browned. Allow to cool then keep in an airtight container for up to 3 days.
