Recipes that don’t take up too much time but look and taste fantastic are the best kind of ones, especially in the run up to Christmas when things are busy. These cute and colourful festive frozen bites can be made ahead and simply taken out of the freezer 10 minutes beforehand – easy peasy!

Ingredients:
For the base –
- 80g oats
- 3 tablespoons maple syrup
- 2 tablespoons nut butter
- 2 tablespoons oat milk
For the middle –
- 200g soft cheese
- 1 scoop protein powder
- 3 tablespoons sweetener
- 1 teaspoon cinnamon
For the topping –
- 2 tablespoons coconut oil
- 2 tablespoons coconut nectar / maple syrup
- 80g oats
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- 30g pumpkin seeds
- 30g dried apricots, chopped
- 30g dried cranberries
- 30g flaked almonds

Make them!
- Mix together the base ingredients to combine then spoon into a 6-hole muffin tin to fill each one up to ⅓ and press down.
- Mix together the soft cheese, protein powder, sweetener and cinnamon then spoon this on top of each base to fill nearly the top.
- Meanwhile make the topping by heating the coconut oil and nectar/syrup in a large pan. Add in the oats, cinnamon and ginger and cook on a medium heat for 8 minutes, stirring continuously. Add in the seeds, nuts and dried fruit and continue cooking for another 5 minutes. Set aside and leave to cool.
- Sprinkle some of this on top of each one, then freeze for 2 hours. When ready to eat, pop out of the freezer 10 minutes before and enjoy.
