Banana & Avocado Chocolate Mousse Frank Bars Tartlets

I imagined using Frank Bars to mould into tartlet cases and create a smooth chocolatey filling made from healthy ingredients – so I gave it a go and the result was delicious! Serving two for a naughty but guilt-free dessert, I chose to use the two most chocolatey Frank Bars with chocolate in to create the cases, then whizzed up a simple filling – quick, easy and totally innocently indulgent!

Ingredients (for 2):
Tart cases

  • 2 Frank Bars – I used Double Chocolate and Oat & Chocolate
  • 1-2 tsp coconut oil

Filling

  • 1 avocado, chopped
  • 1 frozen banana
  • 2 tbsp cocoa powder
  • 2 tbsp natural sweetener
  • ½ tsp vanilla extract
  • A few frozen blueberries, to decorate

Get making!
1) First break the two Frank Bars into small pieces. Melted the coconut oil then stir into a bowl with the pieces, pushing hard with a spoon so they start to melt and mould. Use your hands to press all the mixture together, divide into two then press into two muffin tins so the bottom and edges are covered, with space in the middle to add the filling. Chill in fridge for at least 30 minutes.
2) Whizz together the filling ingredients until smooth. Scrape out then spoon into the two tartlet cases – there may be some leftover so save that! – then return to the fridge for a further 30 minutes at least, to set. When ready, remove from muffin tins with a knife then serve and tuck in!
