Who doesn’t love a delicious blondie, packed with juicy berries and dark chocolate chunks? These ones are gluten-free and can be made vegan – making them ideal for a Veganuary snack – and made especially rich using The Coconut Company’s condensed coconut milk [paid recipe]. You could swap the berries for other soft fruits like plums or peaches, or swap dark chocolate for milk or just one type. Either way, enjoy!

Ingredients:

  • 150g gluten-free flour
  • 90g The Coconut Company coconut sugar
  • 1 teaspoon baking powder
  • 2 tablespoons The Coconut Company condensed milk
  • 2 tablespoons The Coconut Company coconut oil
  • 1 banana
  • 2 eggs (or flax eggs)
  • 50ml oat milk
  • 1 teaspoon vanilla extract
  • 75g frozen berries
  • 40g white chocolate (can be vegan), cut into chunks
  • 40g dark chocolate (can be vegan), cut into chunks

Make them!

  1. Mix together the flour, sugar and baking powder in a bowl.
  2. Melt the coconut oil and condensed milk gently, then whisk together with the mashed banana, eggs, oat milk and vanilla.
  3. Pour into the bowl and mix well to combine.
  4. Spoon into a greased and lined 9x9in baking tin then scatter over the berries and chocolate chunks, gently pressing in.
  5. Bake at 180C for 25 minutes until golden and firm, then leave to cool in the tin. Cut into bars then enjoy!
