Healthy, vibrant and tasty meals that are quick and easy are a winner in any household, which is why these vegan-friendly, protein-packed fajitas are ideal for any night of the week. Chunks of tofu are marinated in a mixture of ginger, garlic, lime, coconut sugar and the star ingredient: The Coconut Company‘s amino sauce [paid recipe], then cooked with veggies to make a filling for wraps. Serve with avocado, salsa, hummus and all the extras for a fun social dinner setting!

Ingredients:

For the tofu –

  • 1 block firm tofu (drained)
  • 2 tablespoons The Coconut Company Coconut Aminos Teriyaki Sauce
  • 1 teaspoon ginger
  • ½ teaspoon garlic granules
  • 1 tablespoon tomato puree
  • Juice of 1 lime
  • 1 teaspoon The Coconut Company Coconut Sugar
  • 1 tablespoon The Coconut Company Coconut Oil
  • 2 celery sticks, diced
  • ½ red pepper, diced
  • 3 mushrooms, diced 

For the fajita extras –

  • 2 tortilla wraps
  • Avocado slices
  • Natural / coconut yogurt
  • Salsa
  • Hummus 
  • Fresh lime juice 
  • Fresh coriander

Make them!

  1. Cut the tofu into small pieces then add to a bowl with the teriyaki sauce, ginger, garlic, tomato puree, lime juice and coconut sugar. Mix well and allow to marinate for at least 30 minutes.
  2. Heat the coconut oil in a pan and add the veggies. Cook for 5 minutes on a medium-high heat, stirring continuously.
  3. Add in the tofu and all of the marinade juices and cook for a further 8-10 minutes until slightly caramelised..
  4. Warm up the tortilla wraps, then serve out the tofu mixture in the middle of each. Add the extras on top and enjoy!
