You’re in for a treat with these gorgeous, TRIPLE chocolate layered goodies. Made from a high-fibre oat base, they are stuffed with a layer of dark chocolate, then white, THEN topped with even more dark chocolate…seriously, what more could you want from a dessert or sweet snack? Especially when they are made from *healthier* ingredients 😉


Ingredients:
For the cup base –
- 150g oats
- 2 tablespoons coconut oil
- 2 tablespoons nut butter
- 3 tablespoons maple syrup
For the white chocolate filling –
- 1 tablespoon coconut oil
- 60g white chocolate
For the dark chocolate mousse filling –
- 100g soft cheese, Quark or coconut yogurt
- 3 tablespoons cocoa powder
- 2 tablespoons sweetener
- 1 tablespoon coconut oil
- 30g dark chocolate
For the topping –
- 2 tablespoons icing sugar
- 1 teaspoon smooth nut butter
- Granola, to sprinkle

Make them!
- Make the base: Melt the coconut oil, nut butter and maple syrup then stir in the oats well. Divide between a 6-hole muffin tin (silicone is best) and push up the sides and across the bottom to create cups. Chill in the fridge.
- Next melt the coconut oil and white chocolate then spoon this between the cups to fill up to half. Chill in the fridge for 1 hour.
- Next mix the soft cheese / Quark / coconut yogurt, cocoa powder and sweetener together. Melt the coconut oil and dark chocolate and allow to cool a little, then mix in. Spoon this over the white chocolate layer to reach nearly the top.
- Mix together the icing sugar, peanut butter and a dash of water to form a slightly runny mixture. Drizzle some over the top of each then sprinkle a little granola over.
- Chill in the fridge for at least 2 hours to set. Then when you’re ready to enjoy, pop out of the tin and eat!
