There’s something special about these autumnal puddings…Not only does the kitchen smell amazing while they are baking, they encompass everything about the wonderful tastes and flavours of this season: cinnamon, ginger, apples, walnuts and to complete it, Nature’s Charm coconut custard to serve alongside! You could swap out pears for apples, or almonds or pecans in place of walnuts if you wish. [Paid recipe in collaboration with Nature’s Charm.]


Ingredients:
- 150g gluten-free flour
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- 1 teaspoon baking powder
- 2 tablespoons vegan margarine
- 90g brown / coconut sugar + 4 extra teaspoons
- 4 tablespoons Nature’s Charm coconut custard
- 1 teaspoon vanilla extract
- 1 large apple, diced
- 50g walnut pieces
- More Nature’s Charm coconut custard, to serve

Make them!
- Mix together the flour, cinnamon, ginger and baking powder in a bowl.
- Gently melt the margarine and sugar, then pour into the bowl along with 4 tbsp of the coconut custard and vanilla extract. Mix to combine.
- Stir in the apple chunks. With 4 x greased pudding tins, place 1 tsp of brown/coconut sugar into each one to coat the bottom of the tins.
- Spoon the mixture in and fill to the top of each. Bake at 180C for 20-25 minutes until golden, risen and firm to the touch.
- Leave to stand for 5-10 minutes, then tip upside down into bowls and scatter some walnuts on top. Serve hot or cold with extra coconut custard and enjoy!
