MATCHA / CHOCOLATE / PISTACHIO PROTEIN CUPS

Don’t these cups look so pretty you just don’t want to eat them?! I love that this easy recipe creates 3 different types of flavours, including peanut butter with chocolate, pistachio and matcha – surely there’s something for everyone! Using the Protein Ball Company’s new stuffed protein balls as the toppings for these treats, you can make these ahead and serve them out when a healthy-ish treat is required.

Ingredients:

For the cups –

  • 1 x can chickpeas, drained and rinsed
  • 50g oat flour
  • 2 tablespoons nut butter
  • 2 tablespoons maple syrup
  • 2 scoops protein powder
  • 1 tablespoon oat milk

For the filling –

  • 1 scoop protein powder
  • 2 tablespoons icing sugar
  • 1 tablespoon smooth nut butter
  • Dash of oat milk
  • Half of Protein Ball Co filled protein balls on top of each one
  • Granola, matcha powder and chopped pistachios, to decorate 

Make them!

  1. Blend the chickpeas, flour, nut butter, syrup, protein powder and oat milk to form a cookie dough mixture. 
  2. Press this into a 6-hole silicone muffin tin – up the sides and on the bottom of each one to form cups.
  3. Mix together the protein powder, icing sugar, nut butter and oat milk to form a thick, smooth paste then spoon this into each cup to fill to the top.
  4. Add half a protein ball in the middle of each one, cut side up. Sprinkle over granola on the chocolate ones, matcha powder on the matcha ones and chopped pistachios on the pistachio ones.
