You can’t beat a crumble, whatever the time of year – because let’s be honest, it’s an absolute classic and tastes just as delicious hot or cold. The beauty of this pudding is that you can use whatever fruit you have to hand, in season, and the topping makes it more exciting – especially when combined with the best kind of accompaniment, ice cream! Oppo makes insanely delicious but low calorie, heathy ice cream and this vegan berry almond one goes perfectly well with this summer-inspired dessert.

Ingredients:

For the fruit –

  • 2 apples, chopped
  • 200g frozen berries
  • 1 tablespoon cornflour
  • 2 tablespoons sweetener
  • 1 teaspoon lemon juice

For the topping – 

  • 100g oats
  • 50g gluten-free flour
  • 50g ground almonds
  • 100g coconut sugar
  • 1 teaspoon cinnamon
  • 75g dairy-free margarine
  • 50g flaked almonds
  • Oppo Very Almond Berry ice cream

Make it!

  1. Mix together the apples, berries, cornflour, sweetener and lemon juice in an ovenproof dish and spread out evenly.
  2. Place the oats, flour, ground almonds, sugar and cinnamon in a bowl then add in the margarine. Rub in with your fingers to form a crumble mixture then stir in the flaked almonds. 
  3. Sprinkle this over the fruit to cover then bake at 180C for 20-25 minutes until golden and bubbling. Serve hot or cold with Oppo ice cream.
