Cooking up a stir fry is one of my favourite go-to fast and healthy recipes for dinner. I’m obsessed with noodles (gluten-free, obviously!) – in soups, in stir fries – and love that they soak up and sit nicely surrounded by other flavours, textures and ingredients.
This recipe combines plenty of veggies, rice noodles and chunks of tofu in a deliciously fragrant sauce, brought to life by adding in a dash of Mr Fitzpatrick’s Lemon & Ginger cordial. You could swap the tofu for chicken or fish if you wish – whatever your preference – either way, it’s a quick dinner to whip up in less then 30 minutes and good for you too!
